A cool and rich cucumber and dill serving of mixed greens that is ideal for sweltering summer days!

With summer here I felt that it was the ideal time to haul out one of my preferred summer plans, this velvety dilled cucumber plate of mixed greens! This plate of mixed greens couldn't be simpler, it's practically simply cut up some cucumber and onions and hurl them in a smooth blend of yogurt (or acrid cream or mayo), lemon juice and garlic and you're ready! Notwithstanding being excessively simple to make you truly can't turn out badly with a cool and succulent cucumber serving of mixed greens on sweltering summer days! The cucumbers are simply overflowing with juices and this velvety dilled cucumber plate of mixed greens is certain to keep you pleasant and cool and hydrated this mid year, particularly when served chilled from the ice chest!
  • 2 large cucumbers, sliced
  • 1/4 cup red onion, sliced
  • 1/4 cup greek yogurt (or sour cream or mayo or combination)
  • 1 lemon, juice and zest (or 1/4 cup white vinegar)
  • 2 tablespoons dill, chopped
  • salt and pepper to taste
  • 1 clove garlic, grated (optional)
  • Mix everything and enjoy!
  • Option: Let the salad chill in the fridge for 30 minutes to let the flavours mingle.
  • Option: Add a teaspoon or so of sugar or honey for a hint of sweetness!.
