MEDITERRANEAN CHICKPEA SALAD RECIPE #HEALTHYVEGAN #EASYRECIPES

Alright, so there's only ONE thing I despise about Trader Joe's and it's that they regularly end a portion of my preferred things. I won't get into points of interest however I become very connected to different items (Helloooo, puffy flapjack balls) that later disappear from the store racks. No clarification… .no conciliatory sentiment. 

What's more, .extremely there's something else I despise… .when they totally modify the entire store. We live sort of a long way from the closest Trader Joe's so when I find the opportunity to visit it's normally a major ordeal… .and it's generally crushed into a lot of different tasks so I have restricted time. 

I like to keep running into the store… get what I need… and get the hell out of there on the grounds that it's consistently a zoo. Particularly with those little lower leg banger smaller than normal shopping baskets with the banner so you can see them coming… .yet you never do. You never observe the truck coming until it rams you in the achilles ligament. Am I right? 

Alright, so I'm meandering on here… ..the one thing I generally, consistently go for is the Balela Salad… which is a Mediterranean Chickpea Salad that is pressed with flavor and crisp EVERYTHING. I used to snatch this chickpea serving of mixed greens when I worked adjacent and eat the entire compartment for lunch. It constantly made me feel like I just siphoned myself up with supplements and rejuvenated my vitality for the rest of the day
INGREDIENTS:
  • 1 15 ounce can Chickpeas rinsed and drained well
  • 1 15 ounce can Black Beans rinsed and drained well
  • 1 English Cucumber Chopped
  • 2 cups grape tomatoes sliced in half
  • 1/2 cup diced red onion
  • 1 cup green olives
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint optional

FOR THE DRESSING:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp lemon juice
  • 1/2 tbsp lemon zest
  • 2 cloves garlic minced
  • kosher salt and fresh black pepper to taste

INSTRUCTIONS:
  1. In a large bowl, toss together the chickpeas, black beans, cucumbers, tomatoes, olives, parsley and mint until well combined. Set aside.overhead shot of ingredients for chickpea salad in a glass bowl with herbs.
  2. In a small bowl, whisk together the olive oil, vinegar, lemon juice, zest and garlic. Season with salt and pepper, to taste.dressing being poured over chickpea salad in a glass bowl.
  3. Pour the dressing over the salad and toss to combine.
  4. Cover the salad and transfer to the refrigerator for 30 minutes.

  6. Serve immediately or store in an airtight container until ready to serve.

RECIPE NOTES:
  1. This Mediterranean Chickpea Salad can be made up to 5 days in advance and stored in the refrigerator in an airtight container.
