Ingredients:
  • 12 medium size tomatoes
  • 1 garlic head
  • 1 yellow onion
  • 1 tbsp thyme
  • 1 1/2 tbsp freshly chopped basil
  • 2 tbsp lemon juice
  • 1 tbsp agave or honey
  • 1/4 cup extra virgin olive oil
  • 1/8 tsp cayenne pepper
  • pinch of salt and pepper, to taste

Instructions:
  1. Preheat oven to 400°. Line a large baking sheet with tin foil and parchment paper.
  2. Quarter the tomatoes and the onion and place in large bowl.
  3. Add thyme, fresh basil, lemon juice, honey, cayenne, salt, pepper and olive oil to the bowl and gently combine all ingredients until tomatoes and onions are nicely seasoned.
  4. Drizzle head of garlic with olive oil and rub throughly till well coated.
  5. Place tomatoes, onions and seasoning on the large baking sheet with the garlic head.
  6. Cook for 45 minutes.
  7. Promptly remove from oven and scoop all ingredients into the Vitamix blender. Blend on high for 1-2 minutes. Add more salt if needed. Blend.
  8. Pour directly into serving bowls and garnish with fresh basil leaves if desired.
