BACON LETTUCE TOMATO (BLT) SPRING ROLL #HEALTHYVEGAN #BACON

I earnestly trust after this formula goes live that nobody pounds me with a beating of 20 lashes since I disrupted a few guidelines. Here and there a young lady needs a little culinary fervor in her life and on the off chance that it means wandering outside my social safe place to sustain myself, I'm down for the test. I'll likewise prepare myself for the wounds.

The individual I'm most worried about is my Mother, the kitchen diva who lives to encourage everybody with her very own two hands before she even considers feeding herself. She has consistently put others before herself and I revere her for that.

Before I dive further into my open conciliatory sentiment to Mom, there's a back-story that all of you ought to know about. Mother is a bad-to-the-bone customary home cook and despite the fact that she's extended her cooking wings to explore different avenues regarding other non-Vietnamese dishes, the lady is still profoundly attached to her culinary history. She won't settle on method, season, flavor, freshness and greater force of zest.

On the off chance that the nourishment is tasteless, she'll let you know. In the event that she puts a dish before you and she altered her perspective and isn't content with it, she'll remove it. Furthermore, you will starve. Genuinely companions, I'm totally serious. We don't eat except if she's totally content with the dish.
INGREDIENTS:
BLT SPRING ROLL:
  • fresh lettuce , torn pieces or chopped
  • 1 medium tomato (seeded and sliced 1/4" thick)
  • 6 pieces bacon , cooked
  • fresh basil , mint or other herbs
  • rice paper
  • avocado slices , optional

SESAME-SOY DIPPING SAUCE:
  • 1/4 cup Soy Sauce
  • 1/4 cup cold water
  • 1 Tablespoon Mayonnaise (optional, this makes the dip creamy)
  • 1 teaspoon fresh Lime Juice
  • 1 teaspoon Sesame Oil
  • 1 teaspoon sriracha sauce or any hot sauce (optional)

DIRECTIONS:
SPRING ROLL:
  1. In large bowl, fill it with water and make it warm by adding hot water. Gently dip each rice paper wrapper in warm water for a few seconds until damp. Don't over soak the rice paper, it will continue absorbing the water on its surface after removing from the hot water. Place rice paper on plate or working surface. As rice paper begins to absorb the water and become more soft and pliable (about 10-20 seconds, depending on wrappers and water temp.), begin to add the fillings.
  2. On the 1/3 section of the rice paper wrapper closest to you, start layering your fillings of lettuce, tomatoes and bacon. You can just have 1 bacon per spring roll but if you want to make it extra flavorful and decadent, add 2 slices of bacon.
  3. Start rolling the wrapper over the fillings away from you, tucking and rolling the wrapper with your fingers, making sure all the fillings remain tight and round within the rice paper wrapper.
  4. Serve immediately, or cover with plastic wrap to eat a few hours later.

SESAME-SOY DIPPING SAUCE DIRECTIONS:
  1. Combine all ingredients (soy sauce, water, mayo (optional), lime juice, sesame oil, and sriracha sauce) in a small mason jar. Close lid and shake vigorously for 15 seconds or until well combined.
