CUCUMBER AND CILANTRO SALAD #EASYRECIPES #SALAD

This crisp tasting Cucumber and Cilantro Salad is ideal for a simple side dish or include a protein and call it supper! There's nothing very like the crunchy surface of a new, solid cucumber serving of mixed greens. I think it nearly possesses a flavor like a vegetable variant of watermelon. Ideal for a sweltering summer day and despite the fact that it's still just January here in California, some days are feeling like summer. 

As I would like to think, plates of mixed greens should be basic except if it's a grain-based serving of mixed greens, where the grain is substantial enough to help the additional fixings you toss in. This Cucumber and Cilantro Salad has some red and yellow peppers for shading and red pepper stew drops to add a little fiery kick to it. The dressing is a very basic olive oil and lime juice mix. 

Heaps of new cilantro is added to complete things off, yet make sure to cleave it finely in light of the fact that no one needs that gigantic bit of leaf stuck in their teeth! This is such a simple plate of mixed greens to assemble and will work incredible as a side for a mid year grill or potluck thing.

INGREDIENTS:
  • 3 large cucumber washed and spiraled
  • 1 red bell pepper diced
  • 1 yellow pepper diced
  • 3/4 cup fresh finely chopped cilantro
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp red pepper flakes

FOR THE DRESSING:
  • 2 tbsp fresh lime juice
  • 3 tbsp extra virgin olive oil
  • 1 pinch kosher salt
  • 1 pinch cracked black pepper

INSTRUCTIONS:
  1. Place the spiraled cucumber on some paper towels and let sit for 5 minutes to absorb any water.
  2. Add the cucumber noodles to a large bowl along with the diced red and yellow peppers.
  3. Add the chopped cilantro, red pepper flakes, salt, and black pepper.
  4. In a separate smaller bowl whisk together the lime juice, olive oil, salt, and black pepper.
  5. Add the dressing to the cucumber noodles and toss gently but making sure to coat all of the cucumber.
  6. Transfer to a serving platter and serve at once or store covered in the refrigerator.
