Parmesan Roasted Tomatoes - succulent and full simmered tomatoes stacked with Parmesan cheddar. So natural to make, idiot proof and astonishing! Each morning, we were blessed to receive an astonishing smorgasbord breakfast with various dishes. One of the dishes that I completely delighted in was the Parmesan broiled tomatoes.Juicy, ready and full cooked tomatoes beat with liberal Parmesan cheddar. They were great to such an extent that I needed to make them upon my arrival. 

These broiled tomatoes are so natural to make, takes just 2 key fixings: tomatoes and Parmesan cheddar. The rest are wash room things that everybody has at home (olive oil, salt and dark pepper).This is the ideal season to attempt this formula as perfect tomatoes are copious in the market or ranchers showcase now.
Ingredients:

  • 6 small tomatoes, halved
  • 1 tablespoon olive oil
  • 1 pinch salt
  • ground black pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions:

  1. Preheat the oven to 400F.
  2. Rinse the tomatoes and sliced into halves. Toss gently with the olive oil. Season with salt and pepper. Arrange the tomatoes on a baking dish, and top with Parmesan cheese. Roast the tomatoes for about 15-20 minutes or until the Parmesan cheese melted and the top is slightly browned.
  3. Remove from the oven and serve immediately.

Recipe Notes:

  1. You may use Mozarella cheese as the cheese topping.
